City of Liverpool College students serve Michelin-Starred meal to celebrate visitor economy week

On Tuesday 5th February, guests from across the city region were treated to a fine dining experience, courtesy of Michelin-starred chef Hrishikesh Desai and students at The City of Liverpool College.

Under Hrishikesh’s supervision, students executed a seven-course meal for 30 guests, which included domaine de lanvaux duck liver parfait, cured Loch Duart salmon, fillet of beef with spiced braised feather blade of beef fritter, and to finish, a dark chocolate delice.

Students from the college were involved with every step of the dinner, including preparation, plating to a precise specification and providing front-of-house service.

The event was part of The City of Liverpool College’s support for Liverpool City Region’s ‘Visitor Economy Week’, showcasing the variety of opportunities and diverse skills associated with a growing visitor economy sector.

According to the Local Government Association, the sector has high potential for growth, with the visitor economy predicted to grow 2.9 per cent over the next decade, which is more than the overall economy (2.5 per cent).

After working in the catering and hospitality industry for many years, Hrishikesh found acclaim in the form of one Michelin star and three AA Rosette awards in his role as executive chef at The Gilpin Hotel.

Speaking about the dinner, Hrishikesh Desai said:

“I have worked in the catering and hospitality industry for many years, and I can see right now that we are facing a crisis, as fewer young people wish to take up a career in this industry.

“It is incredibly important that I take the time to work with institutions such as The City of Liverpool College to support their students, as we need talented young people to step into my shoes when it is their turn to achieve their very own Michelin star.

“This is an invaluable learning opportunity for these students, as not every chef is lucky enough to work a 30-person service to Michelin star standards at such a young age.”
